Join Us in Preserving the Ancient Pasta-Making Traditions of Italy’s Abruzzo Region
More than a cooking course, this is a unique experience and window into the home and life of local Abruzzesi. We will be cooking, breathing and smelling the same authentic flavors of an Italian kitchen as from centuries past. Marino together with Nonna Amina will share their family recipe for the classic pasta of Teramo – ‘Maccheroni alla Chitarra’ or better say ‘Maccheroni alla Chitarra con Pallottine’.
This pasta is named after the old wooden tool used to shape it, the “chitarra”, which is also the Italian word for guitar! The Teramo version with ‘Pallottine’ tiny meatballs that are served with tomato sauce. This is a unique opportunity as handmade pasta has mostly been replaced today, both at home and in restaurants, by modern pasta machines. Good to Know
Please take into consideration that Nonna Amina is almost 90 years old! She is also the caretaker of our Nonno (Grandpa). Occasionally she may not be up to teaching the class and in this case, she’ll still come to supervise Marino & Alberto and tell them to add more salt, but Marino or Alberto will take over leading the class.
