Join Us for an Authentic Abruzzo Cooking Class: Preserving Ancient Pasta-Making Traditions

This is no typical cooking course; it’s a unique experience that lets you step into the daily life of local Abruzzesi. You’ll cook, breathe, and savor the authentic flavors of an Italian kitchen as they have been for centuries. Join Marino and Nonna Anna as they share their family recipe for the classic pasta of Teramo – ‘Maccheroni alla Chitarra,’ or more specifically, ‘Maccheroni alla Chitarra con Pallottine.’

This pasta is named after the old wooden tool used to shape it, the “chitarra,” which is also the Italian word for guitar! The Teramo version with ‘Pallottine’ features tiny meatballs served with tomato sauce. This is a unique opportunity, as handmade pasta has largely been replaced today, both at home and in restaurants, by modern pasta machines. You’ll be hard-pressed to find a more authentic traditional culinary experience in Italy!

The Experience

After meeting up and heading to the kitchen, join us for a journey through time as together we prepare the best fresh egg “spaghetti alla chitarra” from scratch! This centuries-old recipe will change your life when you learn why it’s important to make it by hand and how you can prepare it at home.

Nonna Amina and Marino will also share all the secrets of making the best tomato sauce on earth to accompany your fresh handmade pasta! The best part of all, you can take these recipes back home to make again and again, they will be sure to impress your friends and family.

Good to Know


Please take into consideration that Nonna Amina is almost 90 years old! She is also the caretaker of our Nonno (Grandpa). Occasionally she may not be up to teaching the class and in this case, she’ll still come to supervise Marino & Alberto and tell them to add more salt, but Marino or Alberto will take over leading the class.
